  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add olive oil, onion, and garlic to the pot. Sauté until onions are translucent.
  3. Add carrots and celery, cooking for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and stir in heavy cream, thyme, salt, and pepper.
  6. Simmer for 10 minutes, then stir in the crumbled turkey bacon before serving.
