  • 1 onion, diced
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the leeks and onion, and sauté until soft.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the heavy cream and crumbled turkey bacon. Heat through and season with salt and pepper.
