Easy Spicy Southern Chicken Spaghetti

A delicious and spicy take on the classic chicken spaghetti that combines bold flavors with comforting ingredients.

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon red pepper flakes
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt to taste

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the onions and garlic until fragrant.
  3. Add diced bell pepper and cook until soft.
  4. Add chicken thighs, cooking until no longer pink.
  5. Stir in diced tomatoes, Cajun seasoning, and red pepper flakes; simmer for 10 minutes.
  6. Pour in heavy cream and bring to a simmer, then stir in cheddar cheese until melted.
  7. Toss the cooked spaghetti into the sauce mixture and combine evenly.
  8. Serve hot, garnished with extra cheese if desired.

Notes

  • Adjust the heat by adding more or less red pepper flakes.
  • For a lighter version, substitute heavy cream with half-and-half.
