  • 1 can enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup chopped onions
  • 1 bell pepper, diced
  • 1 can black beans, drained
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef with the onions and bell pepper.
  3. Add the cumin, chili powder, and black beans to the skillet; stir well.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture, roll them up, and place them seam side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake for 20 minutes or until the cheese is bubbly.
