- 1 pound ground beef
- 1 can enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bell pepper, chopped
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef with the chopped onion and bell pepper.
- Stir in the cumin, chili powder, and half of the enchilada sauce.
- Fill each tortilla with the beef mixture and some cheese, then roll them up.
- Place the rolled tortillas in a baking dish and pour the remaining enchilada sauce over them.
