Fall Pumpkin Chocolate Chip : Chocolate Pumpkin Butter Cups (Dairy-Free)

Deliciously rich and indulgent chocolate pumpkin butter cups that are dairy-free and perfect for fall.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt
  • 1 cup dairy-free chocolate chips

Instructions

  1. In a bowl, mix together pumpkin puree, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, and sea salt until smooth.
  2. Melt the dairy-free chocolate chips in a microwave or double boiler.
  3. Pour a small amount of melted chocolate into each cup of a muffin tin, spreading it along the bottom.
  4. Fill with the pumpkin mixture and top with more melted chocolate.
  5. Chill in the refrigerator until set, about 1-2 hours.

Notes

  • Store leftovers in the refrigerator.
  • Can be made ahead of time and frozen for longer storage.
