  • ¾ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh blueberries
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, vanilla extract, and sour cream to the dry ingredients and mix until smooth.
  4. Gently fold in the blueberries.
  5. Pour the batter into the prepared cupcake liners and fill them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let cool completely before glazing.
  8. For the glaze, mix powdered sugar and milk until smooth, then drizzle over cupcakes.

Notes

  • Make sure not to overmix the batter to keep the cupcakes fluffy.
  • Feel free to substitute with frozen blueberries.
