  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup water
  • 3 large eggs (separated)
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg yolks, oil, water, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter until no white streaks remain.
  7. Pour the batter into cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • Make sure not to overmix the batter once the egg whites are added.
