  • 1 cup green beans, trimmed
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. In a separate pot, blanch the green beans in boiling water for 3-4 minutes. Drain and cool in cold water.
  3. In a large bowl, combine the cooled potatoes, green beans, turkey bacon, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
