- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 tsp salt
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the Greek yogurt, diced apples, brown sugar, honey, oil, and eggs until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
