Greek Yogurt Apple Cinnamon Muffins

Delicious and healthy Greek yogurt muffins with apple and cinnamon, perfect for breakfast or as a snack.

  • 1 cup Greek yogurt
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the Greek yogurt, diced apples, brown sugar, honey, oil, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For added flavor, consider adding nuts or raisins to the batter.
