Ingredients

  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, honey, coconut oil, and eggs until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  5. If using, fold in the nuts or chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before removing from the tin.

Notes

  • These muffins can be stored in an airtight container for up to a week.
  • For added sweetness, you can sprinkle some sugar on top before baking.
