  • 1 pound chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  3. Add chicken to the skillet and cook until browned on both sides.
  4. Remove chicken and set aside, then add rice to the skillet and lightly toast for 2-3 minutes.
  5. Pour in chicken broth and return chicken to the skillet.
  6. Cover and simmer for about 20 minutes or until rice is tender and chicken is cooked through.
  7. Stir in BBQ sauce, cover, and cook for an additional 5 minutes.
  8. Serve hot, garnished with chopped parsley.

Notes

  • For a spicier kick, add cayenne pepper or hot sauce to the BBQ sauce.
