  • 1 teaspoon baking powder

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour approximately 1/4 cup of batter for each pancake into the skillet.
  6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook the other side until golden brown.
