Lemon Orzo : Greek Chicken Meatballs With Lemon Orzo

A delightful recipe combining Greek flavors with tender chicken meatballs served over lemony orzo.

  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese

Instructions

  1. In a bowl, combine ground chicken, garlic powder, onion powder, parsley, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until browned on all sides.
  3. In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions.
  4. Once orzo is cooked, drain and stir in lemon juice, zest, and Parmesan cheese.
  5. Serve meatballs over orzo and garnish with additional parsley, if desired.

Notes

  • For extra flavor, add more herbs like oregano or thyme to the meatball mixture.
  • These meatballs can be made ahead and frozen for later use.
