Loaded Bacon And Egg Hash Brown Muffins

Deliciously loaded muffins filled with turkey bacon and eggs, perfect for breakfast.

  • 2 cups hash browns
  • 4 eggs
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup shredded cheese
  • 1/4 cup diced onion
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine hash browns with a pinch of salt and pepper.
  3. Press hash browns into a greased muffin tin to form the base.
  4. In another bowl, whisk eggs with milk, and add in the turkey bacon, cheese, onion, salt, and pepper.
  5. Pour the egg mixture over the hash brown cups.
  6. Bake for 25-30 minutes until the egg is set and the tops are golden.
  7. Let cool for a few minutes before serving.
