Delicious and healthy low carb buffalo chicken stuffed zucchini boats, packed with protein and flavor.

Ingredients

  • 4 medium zucchinis
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup green onions, chopped
  • salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides.
  3. In a bowl, mix the shredded chicken with buffalo sauce, green onions, and salt.
  4. Stuff the zucchini halves with the chicken mixture.
  5. Top with shredded cheese.
  6. Place them on a baking sheet and bake for 20-25 minutes or until the zucchinis are tender.
  7. Serve hot and enjoy!
