  • 4 medium zucchinis
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, diced
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers to create boats.
  3. In a skillet, heat olive oil over medium heat. Add garlic, mushrooms, and spinach; sauté until spinach is wilted and mushrooms are tender.
  4. In a bowl, combine the sautéed vegetables with ricotta cheese, salt, and pepper.
  5. Stuff the zucchini boats with the ricotta mixture, then top with mozzarella cheese.
  6. Place the stuffed zucchini on a baking sheet and bake for 25-30 minutes, until the zucchini is tender and the cheese is bubbly.

Notes

  • Feel free to add other vegetables or spices to customize the filling.
  • For extra flavor, sprinkle some Italian seasoning on top before baking.
