  • 2 chicken breasts
  • 1 spaghetti squash
  • 1 cup cherry tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil, salt, and pepper, then place cut side down on a baking sheet.
  3. Bake in the preheated oven for 30-40 minutes or until tender.
  4. While the squash is baking, season the chicken breasts with salt, pepper, and Italian seasoning. In a skillet, heat olive oil over medium-high heat and cook the chicken until golden and cooked through, about 6-7 minutes per side.
  5. Add garlic and cherry tomatoes to the skillet and sauté for 2-3 minutes until the tomatoes start to soften.
  6. Reduce the heat and stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens slightly.
  7. Scrape the flesh of the spaghetti squash with a fork to create strands and serve the chicken and sauce over the squash. Garnish with fresh basil.

Notes

  • For added flavor, you can marinate the chicken for a few hours before cooking.
  • This dish can be prepared ahead of time and reheated.
