  • 1 pound boneless, skinless chicken breasts
  • 2 cups corn kernels (fresh or frozen)
  • 1 can white beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crema or sour cream
  • 1/2 cup crumbled queso fresco

Instructions

  1. In a large pot, combine the chicken, corn, white beans, onion, garlic, and spices.
