1 pound boneless, skinless chicken breasts
2 cups corn kernels (fresh or frozen)
1 can white beans, drained and rinsed
1 onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crema or sour cream
1/2 cup crumbled queso fresco
Instructions
In a large pot, combine the chicken, corn, white beans, onion, garlic, and spices.
Add the chicken broth and bring to a boil.
Reduce heat and let simmer until chicken is cooked through, about 20 minutes.
Remove chicken, shred it, and return to the pot.
Stir in crema and queso fresco just before serving.
Garnish with additional corn and cilantro, if desired.
