  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons mint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup green mint chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the mint extract.
  4. Combine the flour, baking soda, and salt; gradually blend into the creamed mixture.
  5. Fold in the chocolate chips and mint chocolate chips.
  6. Drop by rounded tablespoon onto ungreased cookie sheets.
  7. Bake for 9 to 11 minutes or until edges are golden brown.
  8. Remove from oven and let cool on cookie sheets for a few minutes before transferring to wire racks.

Notes

  • For chewier cookies, chill the dough for 30 minutes before baking.
  • Store cookies in an airtight container for up to a week.
