- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons mint extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 cup green mint chocolate chips
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the mint extract.
- Combine the flour, baking soda, and salt; gradually blend into the creamed mixture.
- Fold in the chocolate chips and mint chocolate chips.
- Drop by rounded tablespoon onto ungreased cookie sheets.
- Bake for 9 to 11 minutes or until edges are golden brown.
- Remove from oven and let cool on cookie sheets for a few minutes before transferring to wire racks.
