  • 2 cups orzo pasta
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup balsamic vinegar
  • 2 cups chicken broth
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 cup spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add chicken thighs and brown on both sides.
  5. Pour in balsamic vinegar and chicken broth.
  6. Stir in orzo, salt, pepper, basil, and red pepper flakes.
