One-Pot Spinach Orzo with Parmesan

A delicious and easy one-pot meal featuring spinach, orzo, Parmesan cheese, and turkey bacon.

Ingredients

  • 1 cup orzo
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add olive oil and garlic to the pot and sauté until fragrant.
  3. Stir in the orzo and cook for 1-2 minutes.
  4. Add chicken broth, salt, and pepper; bring to a boil.
  5. Reduce heat and simmer until orzo is tender and liquid is absorbed.
  6. Fold in spinach and Parmesan until spinach wilts.
  7. Chop turkey bacon and mix it back into the pot.
  8. Serve warm, garnished with extra Parmesan if desired.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
