One-Skillet Salmon and Lemon Orzo

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 lemons, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Place the salmon fillets in the skillet, season with salt and pepper, and cook for 4-5 minutes on each side until cooked through.
  4. Remove salmon and set aside.
  5. Add orzo to the skillet and toast for 1-2 minutes.
  6. Pour in chicken broth, lemon juice, and zest. Stir to combine.
  7. Bring to a boil, then reduce to a simmer for 10-12 minutes, or until orzo is tender.
  8. Stir in parsley, then return salmon to the skillet for a minute to warm.
  9. Serve hot, garnished with additional parsley if desired.

Notes

  • For extra flavor, add capers while cooking the salmon.
  • Serve with a side salad for a complete meal.
