3 ripe bananas
1/2 cup peanut butter
1/2 cup sugar
1/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup jelly or jam of choice
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mash the bananas until smooth.
Add in peanut butter, sugar, brown sugar, eggs, and vanilla extract. Mix until combined.
Sift in baking soda and salt, then mix well.
Gradually add flour and mix until just combined.
Pour the batter into a greased loaf pan.
Drop spoonfuls of jelly or jam on top and gently swirl with a knife.
Bake for 60 minutes or until a toothpick inserted comes out clean.
Let the bread cool before slicing.
Notes
Use ripe bananas for best results.
