  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 cup brewed coffee
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugars until light and fluffy.
  3. Add the eggs, vanilla, and peppermint extract, mixing until combined.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool before frosting.

Notes

  • For added flavor, you can sprinkle crushed peppermint candies on top of the frosting.
  • These cupcakes can be made a day in advance.
