Instructions

  1. In a large skillet, combine the coconut milk, lemon juice, dill, garlic, salt, and pepper over medium heat.
  2. Bring the mixture to a gentle simmer.
  3. Add the cod fillets to the skillet.
  4. Cover and poach for about 10-12 minutes, or until the cod is cooked through.
