  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 oz cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Mix the dry ingredients with the wet ingredients until just combined.
  5. Fill muffin cups 2/3 full and add a dollop of cream cheese mixture on top.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
