  • 2 large eggs

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Fold in chopped walnuts if using.
  6. Fill each muffin cup about 2/3 full with the batter, and sprinkle streusel topping generously over each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
