  • 1 cup pumpkin puree
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet ingredients, and stir until just combined. Fold in walnuts if using.
  5. Fill each muffin cup about ¾ full with the batter.
  6. Prepare the streusel by combining flour, brown sugar, and cinnamon in a bowl, then cutting in the butter until crumbly. Sprinkle the streusel over the muffin batter.
  7. Bake in preheated oven for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
