  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, brown sugar, granulated sugar, vegetable oil, and eggs until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. In a small bowl, mix the softened cream cheese until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, then add a spoonful of cream cheese, and top with more pumpkin batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
