  • 1 cup pumpkin puree
  • 1/2 cup cream cheese
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a large bowl, mix pumpkin puree, cream cheese, and sugars until smooth.
  3. Add in eggs, oil, and vanilla extract, mix well.
  4. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet mixture and stir until just combined.
  6. Fill muffin cups 2/3 full and bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra treat, add chocolate chips or walnuts to the batter.
  • These muffins are best enjoyed warm with a cup of coffee or tea.
