Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, cream cheese, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add eggs, and mix until smooth.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each muffin cup about 2/3 of the way full with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
