Pumpkin Cupcakes with Salted Caramel Cream Cheese Frosting

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix together granulated sugar, brown sugar, oil, eggs, pumpkin puree, and vanilla until smooth.
  4. Incorporate the dry ingredients into the wet ingredients until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before frosting.
  8. For the frosting, whip cream cheese and salted caramel together until fluffy, then pipe onto cooled cupcakes.

Notes

  • These cupcakes can be made ahead and stored in an airtight container.
  • For an extra touch, drizzle more salted caramel on top before serving.
