1 cup pumpkin puree
1/2 cup vegetable oil
1 cup granulated sugar
1/2 cup brown sugar
4 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 cup chopped pecans
1/2 cup honey
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a bundt pan.
In a large bowl, whisk together the pumpkin puree, vegetable oil, granulated sugar, brown sugar, and eggs until smooth.
In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chopped pecans.
Pour half of the batter into the prepared bundt pan. Drizzle half of the honey and vanilla mixture over the batter. Add the remaining batter and top with the rest of the honey mixture.
Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Let cool for 10 minutes before inverting onto a wire rack.
Glaze with more honey if desired before serving.
Notes
For extra sweetness, drizzle with a cream cheese frosting.
