  • 4 slices turkey bacon
  • 1 cup onion, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and cook turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Stir in pumpkin puree, chicken broth, salt, pepper, and nutmeg.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Blend the soup until smooth and creamy, then stir in heavy cream.
