  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  2. Add turkey bacon and cook until crispy.
  3. Stir in lentils, thyme, and vegetable broth, then bring to a boil.
  4. Reduce heat and simmer until lentils are tender, about 30 minutes.
  5. Remove from heat and stir in parsley. Season with salt and pepper to taste. Serve warm.
