Roasted Potatoes with Herbs

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, combine the olive oil, rosemary, thyme, garlic, salt, and pepper.
  4. Add the potatoes and toss until evenly coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until golden brown and crisp.
  7. Serve warm, garnished with additional herbs if desired.
