  • 4 tablespoons honey
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds about 1/4 inch thick.
  3. Toss the sweet potato rounds in olive oil, salt, and pepper.
  4. Spread the rounds out on a baking sheet in a single layer.
  5. Roast in the preheated oven for about 25-30 minutes, flipping halfway through.
  6. Once tender, remove from the oven and drizzle with honey.
  7. Top with crumbled feta cheese before serving.

Notes

  • For added flavor, sprinkle some chili flakes on top.
  • These can be served warm or at room temperature.
