  • 1 cup jasmine rice
  • 1 can coconut milk
  • 2 cups chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rub the chicken thighs with jerk seasoning.
  3. In a skillet, heat olive oil and sear the chicken until browned.
  4. In a pot, combine jasmine rice, coconut milk, chicken broth, and salt. Bring to a boil.
