Shrimp and Asparagus Stir Fry

Quick and delicious shrimp and asparagus stir fry that is both easy to make and healthy.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced

Instructions

  1. In a large pan, heat the olive oil over medium-high heat.
  2. Add the garlic and ginger; sauté for 30 seconds until fragrant.
  3. Stir in the shrimp and cook until they turn pink, about 3-4 minutes.
  4. Add the asparagus and cook for another 5 minutes, stirring frequently.
  5. Pour in the soy sauce and sesame oil; mix well to combine.
  6. Cook for an additional minute, then remove from heat.
  7. Serve immediately over rice or noodles.

Notes

  • For added flavor, sprinkle sesame seeds on top before serving.
  • Feel free to substitute chicken or tofu for shrimp.
