Simple Baked Stuffed Salmon with Spinach and Feta

A delicious and healthy recipe for stuffed salmon filled with spinach and feta cheese, perfect for a quick weeknight dinner.

  • 4 fillets salmon
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the spinach until wilted. Remove from heat.
  3. In a bowl, combine sautéed spinach, feta, cream cheese, garlic, lemon juice, dill, salt, and pepper.
  4. Place the salmon fillets on a baking sheet. Cut a pocket in each fillet and stuff with the spinach-feta mixture.
  5. Bake for 20-25 minutes or until the salmon is cooked through.
  6. Serve warm.
