  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, sugar, eggs, vegetable oil, and vanilla extract until well combined.
  4. Gradually combine the dry ingredients with the wet ingredients, mixing until just blended.
  5. Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Let cool on a wire rack before serving.

Notes

  • For a sweeter muffin, add chocolate chips or nuts to the batter.
  • These muffins freeze well.
