  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, sugar, brown sugar, and vegetable oil.
  3. Add eggs and mix until well combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to the pumpkin mixture and stir until just combined.
  6. Fold in chopped nuts if using.
  7. Pour the batter into mini loaf pans and swirl a little extra cinnamon sugar on top if desired.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before removing from the pans.

Notes

  • For an extra touch, add chocolate chips to the batter.
  • These loaves freeze well if wrapped properly.
