  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  3. While the potatoes are boiling, cook the turkey bacon in a skillet until crispy. Crumble and set aside.
  4. Drain the potatoes and place them on a greased baking sheet.
  5. Gently smash each potato with a fork.
