Soft Gingerbread Cookies : Old Fashioned Iced Ginger Molasses Cookies

Delicious and soft gingerbread cookies iced for a perfect holiday treat.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together butter and brown sugar until fluffy.
  4. Add molasses and egg to the butter mixture, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Drop rounded tablespoons of dough onto baking sheets.
  7. Bake for 10-12 minutes until set.
  8. Let cool and then ice as desired.

Notes

  • For a spicier cookie, add more ginger.
  • Decorate with royal icing for a festive touch.
