Soft Gingerbread Cookies are perfect for decorating and do not spread during baking.

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
  2. In a separate bowl, cream together the butter and brown sugar until fluffy.
  3. Add the egg, molasses, and vanilla to the butter mixture, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Chill the dough for at least 2 hours.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough to 1/4 inch thickness and cut out desired shapes.
  8. Place cookies on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, until edges are firm.
  10. Allow to cool before decorating.

Notes

  • For best results, chill the dough thoroughly.
  • These cookies hold their shape well when baked.
