  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup strawberry jam
  • 1/2 cup icing sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another large bowl, beat the butter, brown sugar, and granulated sugar until fluffy.
  4. Add the egg, molasses, and vanilla to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Form balls of dough and place them onto a baking sheet.
  7. Make an indentation in the center of each ball and fill it with strawberry jam.
  8. Bake for 10-12 minutes or until lightly golden brown.
  9. Let cool, then drizzle with icing sugar.

Notes

  • For a spicier cookie, add more ginger or cinnamon.
  • You can use different flavors of jam if you prefer.
