These Soft Gingerbread Cookies are the perfect treat for the holiday season, combining the festive flavors of ginger and candy cane.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed candy canes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add molasses, egg, and vanilla to the butter mixture, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Roll the dough into balls and place them on a baking sheet.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Remove from the oven and immediately sprinkle with crushed candy canes.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For softer cookies, do not overbake.
  • Store in an airtight container to maintain freshness.
