Strawberry Cream Cheese Muffins

Delicious and moist strawberry cream cheese muffins that make the perfect breakfast or snack.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the cream cheese, oil, egg, and vanilla until smooth.
  4. Combine the wet and dry ingredients, then gently fold in the strawberries.
  5. Fill the muffin tin about 2/3 full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add a teaspoon of lemon zest.
  • These muffins are best enjoyed fresh but can be stored for a few days.
