  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • 1 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup strawberry puree
  • ¼ cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter until combined. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  4. Add eggs one at a time, mixing on low speed until fully incorporated.
  5. Swirl in the strawberry puree and chopped strawberries into the cream cheese mixture.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 50 to 60 minutes or until the center is set.
  8. Allow the cheesecake to cool at room temperature before refrigerating for at least 4 hours.
  9. Remove from the springform pan and garnish with additional strawberries if desired.

Notes

  • For a richer flavor, use a mix of cream cheese and mascarpone.
